Japan’s famous sushi restaurant, Kuri Sushi Inc., was the first restaurant to grow small fish in containers until they are ready to be used. This is to help with the lesser amount of fish caught in Japan. Their plan is to grow small fish until they weigh more than a kilogram and will start using them in their restaurants in 2021. Based on the report of the Fisheries Agency, the fish supply in Japan becomes smaller while the fish demand and its prices become higher. Kura Sushi’s managing director, Hiroyuki Hisamune, wished to keep the price of grown fish that customers bought and improve the kinds of fish it farms based on its success.
